After creating the default, it was really easy to do though. Since you cannot have 2 defaults for different types, I had to create a couple separate "themes" for tables that did not have video files, so they just show the back-glass. I did this setup as described above for my Visual Pinball tables, so my background is just a large image of the back-glass, and they all play a video of the table. If you want video, I will have to refresh myself on the file path to the generic video you must select for the theme to pull the video from emumovies. If you are not using a video this is even easier. Once you add all the artwork pieces you want (up to 4), then save the theme as Default.zip. Add Image 1 to your theme, and select any art file from your Artwork 1 folder, and select to not include the artwork in the output - that option will make the theme just pull in any art in the corresponding artwork folder where the artwork file name matches the ROM file name. And add your art to the theme, just the art files you want to have in the themes (they should be in your Artwork folders as noted before). You must then add your Art files into the folders (I will have to look up the path to the folder I think it is Media -> Images ->Artwork 1, 2, 3 and 4), the art files must match the ROM name for the game you want them to display for. You would probably want to set a background, that is not specific to any one game. Yes, you can build a generic theme in HyperTheme.
